Crunchy Maple Toffee Apples

Ingredients:

8 small apples
400 g granulated sugar
150 ml apple juice
100 ml maple syrup
1 tsp cider vinegar
150g LOVE Life Berry & Nut Sprinkle, roughly chopped
8 cake pop sticks or strong twigs wrapped with parchment paper at one end
Instructions:
1. Wash the apples and dry. Remove the stems and push the cake pop stick or twig about halfway in each apple. Transfer to a baking tray lined with parchment paper.
2. Pour the sugar into a large, heavy-based pot and warm over low in a bit of water until dissolved. Carefully add the apple juice, maple syrup and vinegar and stir. Increase the heat, bring to a boil and cook 7-8 minutes until the toffee reaches 140*C. To check, use a candy thermometer or drop a small spoonful into a bowl of cold water - the toffee should set instantly.
3. Take the pan off the heat and stir in the nuts & berries mix. Dip each apple into the toffee, let any excess drip back into the pot, then place on the baking tray. Repeat with the remaining apples. Allow to cool completely.
